Next fall my husband and I would like to celebrate a special occasion in the countryside of France and stay at a chateau (or two!) during our trip. I know there are a whole bunch that are available to stay over in. If anyone here has been to any can you let me know your opinions and suggestions??

Although not a chateaux I would recommend that you look at La Bastide de Moustiers, in Moustiers France.
It is an Inn run by Alain Ducasse. There are rooms in the main house and cottages that are available. The best part is that it is small, and the meals extra special.
We like chambre blanche. You can find their web site either directly or through the Ducasse web site. -

I stayed at the Chateau de Chassagne Montrachet in Burgundy recently. If you're a lover of wine, you are in the heart of the best wine producing area of the world. I could see the Montrachet hill from my large bedroom. Vines are outside the window.
Lameloise Michelin-starred restaurant down the road in Chagny is superb.
The chateau is up-market and a nice mix of old and contemporary, with a gallery attached and wine-tasting. No badly priced either.
