If you can swing over to Boulder, CO be sure to have either lunch or dinner at The Kitchen - 1039 Pearl St, Boulder, CO - (303) 544-5973 - http://www.thekitchencafe.com . It has a modern feel to it, and the food is really top-notch for a café.
In Denver there's Brasserie Rouge at 1801 Wynkoop St in Denver (303) 991-2242. As close as you can get to a classic brasserie outside of Paris. Delightful atmosphere and excellent food. Enjoy!
