For your hotel, one of the best options in Bruges is the Relais Bourgondisch Cruyce. It's an exquisitely charming and relaxed boutique hotel in a great location. Their excruciatingly slow virtual tour on their website shows nearly every room in the hotel. Well worth a look. http://www.relaisbourgondischcruyce.be/

As for dining, I highly recommend making a reservation far in advance at De Karmeliet. It's one of the top restaurants in Belgium and is delightful with an excellent wine list. It holds 3 Michelin stars, (which is really the equivalent of one or two stars in Paris, in my opinion). Still, very good. http://www.dekarmeliet.be/

If you can't get in there, I also recommend Den Gouden Harynck

Even if you only do one of the above, you'll have a wonderful time there. Very quaint and relaxing place to spend time.

I didn't realize it when I recommended it to you, but it seems that the Relais Bourgondisch Cruyce was used as one of the sets in the new Colin Farrel/Ralph Fiennes movie, "In Bruges".

I'm not sure if the movie is any good, but it certainly gives you an up-close and personal view inside the hotel as well as the city of Bruges.

Even the trailer for the movie shows a few scenes inside the hotel.

I have a feeling that the Relais Bourgondisch Cruyce is about to become a lot more popular once the movie comes out!

Hotel de Orangerie is a beautiful place. Interiors by Pieter Porters...fabulous rooms (but stay away from canal, a bit noisey)

Bruges was a very pleasant surprise! Walking across the small bridges at night with the lights glowing was a beautiful sight. We stayed at a lovely little place called The Swan. We were put across the canal in one of their new rooms which was charming. Begijnhof is worth a visit and the park, with flocks of white swan, was worth the vist. Enjoy! Also, we felt the restaurant De Kramelist was overrated.

If you are a beer connisseur, Bruges (and Belgium in general) is your place - the complex brews created by the Trappists are especially noteworthy, and Rochefort is my personal favorite. You should definitely try a few, though, and make your mind yourself. Oud Vlissinghe is a charming little pub that dates back to the 1500s, and you can samples lots of local favorites.

Bruges is beautiful town - you will have a great time.
